Stevie Nicks–Inspired “Gold Dust” Citrus and Herb Pasta Salad

Ingredients

12 oz short pasta (bowties or rotini)
1/4 cup olive oil
3 tbsp fresh lemon juice
1 tbsp orange juice
1/2 tsp salt (plus more to taste)
1/4 tsp black pepper
1/4 tsp garlic powder
1 1/2 cups cherry tomatoes, halved
1 cup cucumber, chopped
1 cup yellow bell pepper or sweet corn kernels (for the “gold dust” color)
1/3 cup crumbled feta or grated parmesan
1/4 cup chopped fresh parsley or basil

Cook the pasta according to package directions, then drain and rinse under cool water. In a small bowl, whisk together the olive oil, lemon juice, orange juice, salt, pepper, and garlic powder. In a large bowl, combine the cooled pasta, tomatoes, cucumber, yellow pepper or corn, feta or parmesan, and herbs. Pour the dressing over the salad and toss until everything is lightly coated. Taste and adjust seasoning as needed. Chill for at least 30 minutes before serving.
